Like all Moritaka Supreme knives, this kurouchi-finished santoku sports a core of very hard Aogami Super steel which can take an incredibly acute and refined edge. This steel is also slightly less reactive than other carbon steels due to the high alloy content.
Moritaka Hamono is one of the oldest knife manufacturers we carry on our site and centuries of crafting hand forged blades have culminated in these wonderful knives. 50/50 convex grinds provide great ingredient separation and the high level of fit and finish on these knives belies the extremely aggressive pricing for such a premium product.
