The Hattori FH Series knife is available in very small batches to ensure a high level of quality and productivity. Every detail in the design and manufacture was taken into account thanks to a special heat treatment process, a handle with contour and balance, ergonomics and profile of each knife.
The blade is made of cobalt steel VG-10 (HRC60 to 61). Despite the fact that this is a simple design, we can feel that the detailed work of Hattori is a high level of skill from a thinly pointed and polished blade.
For the grip material, the black Micarta tape was chosen for durability with stainless steel fasteners and rivets. Each handle has a contour shape that is comfortable for your hand, and the total gap narrows for a perfect weight balance.
The basis of professional western cuisines, Petty knife is a small universal knife used for peeling, shaping and slicing fruits and vegetables, chopping herbs and making side dishes. The compact size and relatively narrow blades of the Petty knife mean it is very agile and manageable, making it ideal for precise cuts.
