Master Takamura is known for producing beautifully crafted knives from the most advanced steels available on the market. Their fit and finish are some of the best I've personally seen on Japanese knives. The Takamura Tsuchime VG10 Gyuto 210mm is a slim laser, extremely lightweight, perfectly balanced and razor sharp right out of the box.
Takamura does an excellent job of forging and heat treating VG10, which, when properly machined, is an excellent steel. The knife is also very stain resistant and is wrapped in a softer stainless steel sheath for added strength. It just flies through products effortlessly! The 60 +/- 1 blade hardness also makes it easy to sharpen the knife, which is handy for busy kitchens. The classic Takamura 8000 grit and Tsuchime forged finish make these knives easy to cut.
