Blacksmith: Tadayoshi Tokaji / Tadayoshi Forging Co., Ltd.
Learned the technique of "free forging" and mainly produces sickles, knives. The skill is highly evaluated nationwide and contributes to the spread of Tosa knives.
Mr Tadayoshi Tokaji can make non-standard dimensions and shapes according to customer's needs. Additionally, Tokaji Forging is run by Tadayoshi Tokaji and his son Tsukasa. Both of them certified as a "Takumi of Tosa ( Artisan of Tosa )", Tsukasa is active as a lecturer of technical transfer at the "Blacksmith Creation School" of 'Kochi pref. Tosa Knife Cooperative'.
The sharpening of this type of Tosa knives is slightly different from 'Hon Hatsuke' sharpening in Sakai or other production areas. It is sharpened to a level that the ingredients can be cut properly, but it is not as sharp as Sakai knives.
A blacksmith manufactures from forging to sharpening, but since it is assumed that the user will sharpen according to their own convenience, they don't do 'Hon Hatsuke' process.
