Suisin knives are made by artisans in Sakai, Japan. Manufacturing technology - Honyaki, that is, the knife is made from a single piece of steel, in this case it is Japanese Nihonko steel (日本 鋼) from Aichi Seiko Co., Ltd.
An important steel that has been used to make knives in Japan since ancient times, providing a better sharpness than regular stainless steel. Japanese Nihonko steel is a high quality steel with an extremely high carbon content. Produced in Japan in limited quantities. Steel is harder than German steel and has greater sharpening potential. It also maintains the edge longer than other mild steel formulas. These features make Japanese steel an ideal material for the production of high quality cutlery.
The production site is located in Sakai, the production technology and especially the sharpening process is excellent.
Remember, this is carbon steel, the cut and retention are excellent, but the knife must be monitored to prevent rust.
